This brisket recipe gets its smoky flavor from a charcoal grill and it gets its silky tenderness from a slow braise in a tangy/sweet glaze.

First, get some beef brisket

I used the flat portion of the beef brisket which is a cut of beef that takes a long time to break down. Its the less fatty portion of the whole brisket. The beef board has lots of information about this cut on their website HERE
Second, build your fire
I used a chimney starter to get my coals going. I prefer this to lighter fluid which can leave a bad taste in your food. Build a two-zone fire with a pile of hot coals on one side leaving the other side of the grill empty. I used charcoal briquettes for a consistent, long burning fire.
Put a pan of water under the grate of the empty side of the grill. This adds moisture to keep the brisket from drying out during smoking
Third, season the brisket
Cut the brisket into two inch cube and season it with salt, pepper, granulated garlic, and onion powder.
Fourth, grill the brisket
Grill the brisket over the hot coals for just a few minutes per side to get a flavorful char on the outside.
Fifth, smoke the brisket
Move the brisket to the cooler side of the grill over the water pan. You want to smoke the brisket at about 250 -275 degrees for an hour and a half.
Sixth, braise the brisket
Mix up your sauce and add the brisket to the pan of sauce. Cover the pan and place it in the oven at 325 degrees for two and a half hours or until its tender.

Ingredients
- one 5-6 pound beef brisket flat
- 3 teaspoons of kosher salt
- 2 teaspoons pepper
- 1 teaspoon of granulated garlic
- 1 teaspoon onion powder
- 2 cups of beef broth
- 1 cup of ketchup
- 1/2 cup brown sugar
- 1/2 cup balsamic vinegar
- 1 onion
Instructions
- trim the fat from the brisket and cut into 2 inch cubes
- season the brisket with salt, pepper, onion powder and granulated garlic
- grill the brisket over the hot coals for 5 minutes, turning to brown
- place a pan of water under the grates of the cool side of the grill
- move the brisket to the cool side of the grill over the water pan
- close the grill and smoke the brisket for 1 and 1/2 hours
- mix the beef broth, ketchup, brown sugar, and balsamic vinegar together
- chop the onion
- add the brisket and chopped onion to the sauce mixture, cover and braise for 2-3 hours, until tender
