How to make SMOTHERED PORK CHOPS with brown gravy
Learn how to make these tender smothered pork chops in delicious brown gravy in this easy recipe. I used pork steaks for this recipe. This cut is from the shoulder and gets very tender when cooked low and slow.

FIRST
Start with well-marbled pork shoulder steaks. Pat them dry and season with salt, lemon pepper , nd garlic powder. Dust the pork with all purpose flour.
NEXT
Brown the pork in a heavy DUTCH OVEN like this one found on Amazon
THEN
Remove the pork from the Dutch oven then saute the onion. Once the onion has softened add the garlic, bay leaf and thyme.
FINALLY
Add the pork back to the pan with some chicken broth. Cover and cook in the oven for 1 hour. Remove the lid and cook for 30 minutes longer to thicken the sauce. Serve over grits or rice
How to make SMOTHERED PORK CHOPS with brown gravy
Ingredients
- 5 pounds pork steaks
- 1 teaspoon salt
- 1 teaspoon lemon pepper
- 1/2 teaspoon garlic powder
- 1/4 cup Wondra flour or all purpose flour
- 1 tablespoon of canola or vegetable oil
- 1 chopped onion
- 2 cloves garlic chopped
- 2 bay leaves
- 2 fresh thyme sprigs
- 3 cups chicken broth
- Serve with grits or rice
Instructions
- Preheat oven to 325 degrees
- Season pork steaks with salt, lemon pepper and garlic powder
- heat the oil in a Dutch oven and brown the pork in batches
- Drain the oil and saute the onion until translucent
- Stir in the chopped garlic, bay leaves and thyme
- Add the pork back to the pot and add the chicken broth
- Cover and cook in the oven at 325 degrees for 1 hour
- Remove the cover and let cook for 30 minutes more
- Spoon away any excess oil and serve
