Traditionally Southern fried whiting is made by coating seasoned, boneless fillets of whiting fish with a combination of cornmeal and flour. Vegetable or peanut oil is heated in a cast iron skillet and the fish is quickly fried to golden brown crispy perfection. You can fry catfish the same way for another tasty Southern meal.

What is whiting?

Whiting is a white flesh fish in the cod family. Today I’m cooking Pacific Whiting also known as hake but there are several varieties available in stores. Look for the Marine Stewardship Council seal for whiting that is sustainably sourced.

Where do you buy whiting fish?

I usually buy frozen boneless, skin-on whiting fillets in the freezer section of the grocery store. I rarely find fresh whiting in stores. Whiting is usually an inexpensive fish to purchase, I usually buy a few bags and store them in my freezer

I do things a little differently. I coat skin on boneless whiting fish fillets in corn masa harina. Corn masa is a type of corn flour made from corn treated with lime (not lime juice but a diluted solution of calcium hydroxide). Corn masa is used to make tortillas and tamales. I know it’s not the traditional way to make Southern fried whiting but I love the corn flavor and fine texture of corn masa when I cook fried whiting.

Ingredients
  

  • 2 pounds of whiting
  • 4 tablespoons of lemon pepper DIVIDED
  • 2 teaspoons of garlic powder DIVIDED
  • 2 cups of corn masa harina gluten free or corn meal mix (corn meal mix is NOT gluten free)
  • canola oil or other neutral oil for frying

Instructions
 

  • Mix the lemon pepper and garlic together and divide the seasoning in half. Season the fish with half of the seasoning and add the rest of the seasoning to the masa harina. Shake the corn masa to mix.
  • Add the fish to the corn masa and shake to coat
  • Heat the oil to 365 degrees
  • Shake the excess corn masa from the fish and fry the fish for 3-4 minutes per side or until golden brown
  • Drain the fish on a rack
