Broiled Flounder with Angel Hair Pasta Risotto Style

You will need a sheet pan, a Dutch oven or large sauce pan and a microwave proof container

Ingredients
  

  • one 14 ounce can diced tomatoes
  • 3 cups of low sodium chicken broth divided
  • canola or vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced red bell pepper
  • 2 cloves garlic minced
  • 1 pound angel hair pasta
  • 12 ounces fresh broccoli florettes
  • six 3 ounce flounder filets
  • salt
  • pepper
  • garlic powder
  • 2 tablespoons of butter optional
  • 2-3 tablespoons Parmesan cheese optional

Instructions
 

  • Combine 2 cups of chicken broth (reserve one cup for later) and one can of diced tomatoes with juice in a microwave proof container. Heat this in the microwave for 3 minutes or until hot
  • Turn on your broiler and place the sheet pan under the broiler
  • Heat the Dutch oven with 2 tablespoons of canola oil
  • Saute the diced onions and peppers for 2-3 minutes. Add garlic and stir for 30 seconds more
  • Break the angel hair pasta into thirds, place in the Dutch oven and stir.
  • Pour the hot chicken broth/tomato mixture over the pasta, stir and top with broccoli
  • Cover and simmer for 2 minutes. Stir in the remaining cup of chicken broth and butter and Parmesan cheese if using. Cover and cook for another minute or two until done.
  • While the pasta is cooking, season the flounder with 1/2 teaspoon of salt, 1/8 teaspoon of pepper and 1/4 teaspoon of granulated garlic.
  • Remove the sheet pan from the broiler, pour 1 tablespoon of canola oil on it and add the flounder
  • Place the flounder under the broiler for 3 minutes
