Chorizo Spice Rubbed Grilled Pork Chops #GrillPorkSweeps

Ingredients
  

  • 2 cloves of garlic
  • 2 tablespoons mayonnaise
  • 1 tablespoon paprika
  • 2 teaspoons chili powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried cumin
  • 4 center cut pork chops

Method
 

  1. Smash the cloves of garlic
  2. Mix the garlic, paprika, chili powder, cayenne pepper, kosher salt, dried oregano and dried cumin into the mayonnaise.
  3. Rub this mixture all over each pork chop
  4. You can let this sit at room temperature for 30 minutes and then grill or
  5. Place the pork chops into a zip top bag and store in the refrigerator 3 hours to as long as overnight
  6. Remove the pork chops from the refrigerator and let sit at room temperature for 30 minutes
  7. Grill the pork chops over hot coals for 4-6 minutes per side, until an instant read thermometer reads 145 degrees.
  8. Let the pork chops rest, tented with foil for 3-5 minutes before serving
