I’M IN LOVE WITH ALL THINGS GRILLED AND THIS CHORIZO SPICE RUBBED GRILLED PORK CHOP RECIPE IS ONE OF MY FAVORITES

Pork chops cook so quickly, with just a little prep, grilling your dinner can get a meal on the table in no time. Some hot coals and marinated meats are a great way to start, a few vegetables ( potatoes, corn and zucchini are my favorites) tossed on the grill complete the meal.

I have been a huge fan of chorizo ( the dried spicy Spanish sausage) since I first tried it some years ago. The spices in chorizo are so savory and delicious-paprika, oregano, cumin, fresh garlic, salt- I’ve long wanted to rub them all over everything (well, ALMOST everything) so I started with this pork chop recipe. Smash the garlic cloves and mix them and the dried spices into a little mayonnaise to form a paste and rub this onto both sides of each pork chop. If you can do this the day before that would be great, the salt in the spice mix acts as a brine that will keep the pork chops moist during cooking.

Be sure to use an instant read thermometer, cooking pork chops to 145 degrees is another secret to cooking succulent, juicy pork chops.

Chorizo Spice Rubbed Grilled Pork Chops #GrillPorkSweeps

Ingredients
  

  • 2 cloves of garlic
  • 2 tablespoons mayonnaise
  • 1 tablespoon paprika
  • 2 teaspoons chili powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried cumin
  • 4 center cut pork chops

Instructions
 

  • Smash the cloves of garlic
  • Mix the garlic, paprika, chili powder, cayenne pepper, kosher salt, dried oregano and dried cumin into the mayonnaise.
  • Rub this mixture all over each pork chop
  • You can let this sit at room temperature for 30 minutes and then grill or
  • Place the pork chops into a zip top bag and store in the refrigerator 3 hours to as long as overnight
  • Remove the pork chops from the refrigerator and let sit at room temperature for 30 minutes
  • Grill the pork chops over hot coals for 4-6 minutes per side, until an instant read thermometer reads 145 degrees.
  • Let the pork chops rest, tented with foil for 3-5 minutes before serving

    Wow, I never thought to usa a chorizo spice on a porkchop, I bet it tastes amazing. I’ll definitely have to try this.

    Yum! I don’t use enough chorizo in my cooking,and I’m definitely going to fix that. When the kids were little it was too spicy, but they can handle the flavor now.

    Yum! I love the addition of chorizo to the pork! Pork on pork flavors, I don’t think you could beat this unless you wrapped it in bacon! 😉

    We’re kosher, so no pork for us. This rub sounds like it would be great on chicken or beef, as well, though!
