Keto Corned Beef Hash

Ingredients
  

  • 1 tablespoon canola or vegetable oil
  • 1/2 pound of cooked corned beef
  • 1 cup fresh or frozen cauliflower florets
  • 1 scallion
  • 1/2 cup chicken broth
  • 1 large egg

Method
 

  1. Dice the corned beef into 1/2 inch chunks
  2. Chop the scallion
  3. Saute the corned beef, cauliflower, and scallions in oil over medium heat for 2-3 minutes
  4. Pour in the chicken broth and cover. Let this cook for 5 minutes
  5. Add the egg and cook covered for 1-2 minutes depending how you like your egg
