Now, I know what you’re going to say. “Cauliflower ain’t potatoes!” Yes, I know but if you want to lose weight on a keto diet then make the switch. Cauliflower doesn’t taste like potatoes but it gives a good texture and the cauliflower goes great with the corned beef. It’s so delicious, I think you’ll like it. Eliminate high carb onions from the traditional corned beef hash recipe. Substituted 1/2 cup chopped red bell peppers for half the cauliflower if you like, to add a bit of color.

Corned beef is made from beef brisket that has been brined in a salt solution. Brisket tends to be a fatty cut of meat but it is usually trimmed well before processing. Sometimes I make my own corned beef but this time I didn’t have the patience, I just picked up a package from the grocery store. Check the label to be sure the package of corned beef has no carbohydrates. Cook the corned beef according to package labels, it’s usually boiled for a couple of hours. I cooked my corned beef in 2 cups of water in my Instant Pot pressure cooker in about 90 minutes. Remove the corned beef from the water and store in your refrigerator until ready to use.

Crisp the diced corned beef in a little oil, add the cauliflower and scallion, steam with some chicken broth and top with an egg. Simple, low-carb and delicious keto corned beef hash.

Ingredients
  

  • 1 tablespoon canola or vegetable oil
  • 1/2 pound of cooked corned beef
  • 1 cup fresh or frozen cauliflower florets
  • 1 scallion
  • 1/2 cup chicken broth
  • 1 large egg

Instructions
 

  • Dice the corned beef into 1/2 inch chunks
  • Chop the scallion
  • Saute the corned beef, cauliflower, and scallions in oil over medium heat for 2-3 minutes
  • Pour in the chicken broth and cover. Let this cook for 5 minutes
  • Add the egg and cook covered for 1-2 minutes depending how you like your egg
