Lemon Rosemary Chicken

Ingredients
  

  • 2 pounds of boneless skinless chicken thighs
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/2 teaspoon garlic powder
  • 1-2 tablespoons of canola or grapeseed oil
  • 1-2 cloves of garlic
  • 2 lemons
  • 3 sprigs of rosemary each about 2-3 inches long

Method
 

  1. Season the chicken thighs with salt, pepper and garlic
  2. Heat a 12 inch skillet with the oil
  3. When the oil is hot sear the chicken for 5-7 minutes on each side deepending on how thick the thighs are
  4. While the chicken is cooking squeeze the juice of one lemon over the chicken
  5. Smash the garlic cloves and chop them
  6. Add the rosemary stems and smashed garlic to the pan
  7. Cook the chicken until it is browned and cooked through
  8. Taste for seasoning and add more lemon and salt if necessary
  9. Garnish with lemon slices
