While the chicken is browning, throw in the aromatics. Garlic, rosemary and lemon give this dish a bright, robust flavor.

Make a quick veggie side

In a separate skillet I caramelized an onion for about 5 minutes. I tossed in a bunch vegetables that I happened to have in the fridge. Green beans and broccoli floret00s were what I had on hand however cauliflower, spinach or kale would have been great as well. Pour in a splash ( about a 1/4 cup) of water, vegetable stock or chicken stock to steam and tenderize the veggies.

Honestly, if you have a large enough skillet you can toss the vegetables into the same pan as the chicken and make this a one pot meal.

Lemon Rosemary Chicken

Ingredients
  

  • 2 pounds of boneless skinless chicken thighs
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/2 teaspoon garlic powder
  • 1-2 tablespoons of canola or grapeseed oil
  • 1-2 cloves of garlic
  • 2 lemons
  • 3 sprigs of rosemary each about 2-3 inches long

Instructions
 

  • Season the chicken thighs with salt, pepper and garlic
  • Heat a 12 inch skillet with the oil
  • When the oil is hot sear the chicken for 5-7 minutes on each side deepending on how thick the thighs are
  • While the chicken is cooking squeeze the juice of one lemon over the chicken
  • Smash the garlic cloves and chop them
  • Add the rosemary stems and smashed garlic to the pan
  • Cook the chicken until it is browned and cooked through
  • Taste for seasoning and add more lemon and salt if necessary
  • Garnish with lemon slices
