Rosemary Cheese Crisps

Servings: 18 -20 crisps

Ingredients
  

  • 4 ounces of cheddar cheese
  • 2 ounces of Parmesan cheese
  • 1 teaspoon rosemary
  • 1/4 teaspoon ground black pepper
  • 14 teaspoon cayenne pepper
  • 1/2 teaspoon smoked paprika

Method
 

  1. Shred the cheeses in a food processor or on a box grater (use the large holes)
  2. Mix the rosemary, pepper, cayenne and smoked paprika with the cheeses
  3. On a rimmed sheet pan lined with parchment paper place the cheese mixture in 2 tablespoon mounds one inch apart.- I used three separate sheet pans with six or seven cheese crisps on each
  4. Bake the cheese rounds for 7-9 minutes, remove from the oven and let cool for 1 hour
  5. Drain the cheese crisps om paper towels to remove excess oil
  6. Serve or Store in an airtight container
