Whole30 inspired Shrimp and Kale with Ghee

Servings: 1 -2 servings

Ingredients
  

  • 1 tablespoon ghee
  • 3 cups chopped kale
  • 12 cup sliced red bell pepper
  • 2 tablespoons of water or chicken broth
  • 8 ounces peeled and deveined medium shrimp
  • 1 clove of garlic - thinly sliced
  • salt and pepper to taste

Method
 

  1. Place the ghee in a large saute pan over medium heat
  2. Add the kale, sliced peppers and water or broth. Stir and cover, cook for 5 minutes until the kale wilts
  3. Remove the lid and stir the kale and peppers
  4. Season the shrimp with salt and pepper
  5. Move the kale and peppers to the side of the pan and add the shrimp and garlic
  6. Stir everything together
  7. Saute for 5 minutes or until the shrimp have turned pink and curled
