Vegetarian Southwestern Stuffed Sweet Potatoes

Ingredients
  

  • 2 large sweet potatoes
  • 1 package of MorningStar Farms® Chipotle Black Bean Crumbles™ cook as much as you need
  • 1 package of MorningStar Farms® Meal Starters® Chik’n Strips cook as much as you need
  • 1 cup Great Value frozen corn
  • 1 avocado
  • 1/2 cup tomato
  • 14 cup red onion
  • 1/4 cup fresh cilantro or parsley

Instructions
 

  • Reheat your cooked sweet potato in the oven or microwave and stir up the center
  • Cook the MorningStar Farms® Chipotle Black Bean Crumbles™, the
  • MorningStar Farms® Meal Starters® Chik’n Strips and the Great Value frozen corn according to package directions
  • Dice your avocado, tomatoes, onion and herbs
  • Stuff your sweet potato with the fillings you like and serve

    Good ideas here! Our family already thinks that the Morningstar Spicy Black Bean burger is the best veggie burger in the frozen food section, but we haven’t tried the crumbles yet. I think I’ll get some today! BTW, when baking large whole sweet potatoes, it’s always a good idea to pierce them with a few small holes from a knife or fork. Occasionally they blow apart if you don’t.

    Stuffed sweet potatoes! Brilliant. How do you roast your sweet potatoes? In the oven?

    • Yes, I roast the sweet potatoes on a pan in the oven. It usually takes about 45 minutes at 350 degrees depending on the size of the sweet potato
