I always roast a few extra potatoes and sweet potatoes on the weekend to use in quick weeknight meals. Combine cooked sweet potatoes with MorningStar Farms® Chipotle Black Bean Crumbles™, Meal Starters® Chik’n Strips, Great Value™ frozen corn and a few fresh ingredients to make these delicious Vegetarian Southwestern Stuffed Sweet Potatoes. Here’s how you make them:
Heat your MorningStar Farms Chipotle Black Bean Crumbles™, Chik’n Strips and Great Value Corn
The MorningStar Farms Chipotle Crumbles are pictured above. Heat all products according to the directions on the packages for best results
Assemble your ingredients
Dice some fresh tomato, avocado and onions to top your sweet potato or use store bought salsa and guacamole for a real time saver.
Get your sweet potato ready
I heated my precooked sweet potato in the microwave and stirred up the middle a bit to make it easier to eat
Build your Vegetarian Southwestern Stuffed Sweet Potatoes
Let everyone choose the toppings they like and stuff their own sweet potato however they want. The sweet potato pictured above is stuffed with MorningStar Chipotle Black Bean Crumbles™, Chik’n Strips and Great Value Corn as well as avocado, tomatoes and onion. Serve these Vegetarian Southwestern Stuffed Sweet Potatoes along with a salad to add even more vegetables to your meal. It’s a great way to keep your Vegolutions!
Vegetarian Southwestern Stuffed Sweet Potatoes
Ingredients
- 2 large sweet potatoes
- 1 package of MorningStar Farms® Chipotle Black Bean Crumbles™ cook as much as you need
- 1 package of MorningStar Farms® Meal Starters® Chik’n Strips cook as much as you need
- 1 cup Great Value frozen corn
- 1 avocado
- 1/2 cup tomato
- 14 cup red onion
- 1/4 cup fresh cilantro or parsley
Instructions
- Reheat your cooked sweet potato in the oven or microwave and stir up the center
- Cook the MorningStar Farms® Chipotle Black Bean Crumbles™, the
- MorningStar Farms® Meal Starters® Chik’n Strips and the Great Value frozen corn according to package directions
- Dice your avocado, tomatoes, onion and herbs
- Stuff your sweet potato with the fillings you like and serve

Our family already thinks that the Morningstar Spicy Black Bean burger is the best veggie burger in the frozen food section, but we haven’t tried the crumbles yet. I think I’ll get some today! BTW, when baking large whole sweet potatoes, it’s always a good idea to pierce them with a few small holes from a knife or fork. Occasionally they blow apart if you don’t.
