Did your favorite team make the playoffs…mine didn’t (I still love you Big Blue Wrecking Crew!) but I’m still going to watch, there are some pretty good matches lined up. There’ll be football games on T.V. wall to wall over the next few weekends so its a perfect time to pop this XXX Hot Beer Cheese Fondue in the crock pot to keep it warm and gooey throughout all the game watching.

I stopped by my local Publix to pick up the ingredients I needed to make my Hot Beer Cheese Fondue -hot sauce, cheese, light beer, peppers, onion and garlic. Steak, bread and veggies were on the list as well, these were going to be delicious grilled up to dip in the melted cheese.
When I say XXX HOT Beer Cheese Fondue I mean temperature hot AND spicy hot thanks to El Yucateco XXXtra Hot Chili Habenero Sauce. I’ve heard people complain that they can’t find a hot sauce hot enough to satisfy them, well they need to try this. El Yucateco XXX Hot is VERY HOT, it’s the hottest sauce in the El Yucateco line, but it’s also very flavorful. The fruity-ness of the habenero peppers really does shine through. El Yucateco hot sauce contains much less vinegar that most other hot sauces, allowing the habenero flavor to take the lead. Made from an old Mayan recipe, it’s about 90% habenero pepper with no artificial color. Pairing the XXX hot sauce with three types of cheese cools the heat a bit. If you like things a spicy but not quite this hot you should try El Yucateco Red Hot Sauce. You’ll still get a nice kick from it but it isn’t as hot as the XXX.
Making the XXX Hot Beer Cheese Fondue is simple, just follow these easy instructions. The full, printable recipe is below as well.
First dice the red onion, red bell pepper and garlic. Place the diced vegetables into a pot with the beer and bring this to a simmer
Toss the cheeses with some cornstarch and place it into the crock pot
Pour the hot beer and vegetables over the cheese and stir. Add the El Yucateco XXX Hot Sauce and lemon juice. Cover and cook on high for about an hour and a half, stirring occasionally.
Dip ALL THE THINGS into the XXX Hot Beer Cheese Fondue! Grilled vegetables are my favorite things to dip into the fondue, grilled bread is a close second. Grilled beef, pretzels even apples are fantastic dipped in cheese

Hot Beer Cheese Fondue
Ingredients
- 1/2 cup diced red onion
- 1/2 cup diced sweet red bell pepper
- 2 cloves of garlic minced
- 2 cups of beer
- 2 tablespoons corn starch
- 3 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup shredded Parmesan cheese
- 1 tablespoon lemon juice
- 2 tablespoons of El Yucateco XXX Hot Sauce
Instructions
- Place the diced onion, pepper and garlic in a pot
- Pour in the beer and bring to a simmer. Simmer for 2 minutes
- Toss the shredded cheese with the corn starch
- Place the shredded cheeses into the crock pot
- Pour the hot beer and vegetables over the cheeses
- Add the XXX El Yucateco Hot Sauce and lemon juice
- Stir and cover. Cook on high for one hour stirring every half hour or so
- OR to cook on the stove top
- Add the hot sauce, lemon juice, shredded cheeses and cornstarch to the hot beer and vegetables
- Stir and simmer on medium low heat until smooth, about 5 minutes
- Serve with grilled meats, vegetables and bread
