Barbecue Chicken meatballs are a fun recipe for your next party but be warned, you’re going to have to make a TON of these. They’ll disappear quicker than your paycheck at a casino. I made these for a client’s party last night and guests were coming into the kitchen to get them by the bowl full, I barely had time to get them on the wonton chips and out to the living room. Guests loving your food and wanting to eat it all is the BEST of all problems for a chef to have.
Ground chicken has a softer texture than ground beef so these meatballs don’t hold their shape as well and tend to be flat on the bottom. That works out great for this recipe so the meatballs won’t roll off the wonton chip when you pick it up. I don’t add breadcrumbs to firm up the mixture because that changes the texture of the meatballs in a way I find unpleasant.

The most delicious BBQ Chicken Meatballs #recipe
Ingredients
- 1 egg
- 2 shallots
- 3 scallions
- 1 inch of ginger
- 2 pounds ground chicken
- 2 tablespoons barbecue sauce I used Sweet Baby Ray's or make your own
- 1 teaspoon soy sauce
- canola oil
- FOR THE GLAZE
- 1/2 cup barbecue sauce
- 1/4 cup soy sauce
- 1 teaspoon grated ginger
- 1/2 teaspoon grated garlic
- sriracha or hot sauce to taste
- scallions and sesame seeds to garnish
Instructions
- Beat the egg in a bowl large enough to mix all of the ingredients.
- Mince the shallots, chop the scallions and grate the ginger, add these to the beaten eggs along with the ground chicken, barbecue sauce and soy sauce.
- Oil the sheet pans with about a tablespoon of canola oil on each pan
- Use a 1/4 scoop to form appetizer sized meatballs, scoop the meatballs onto the sheet pans ( you can make the meatballs larger, just increase the cooking time accordingly)
- Chill the meatballs for about 30 minutes.
- Roast the meatballs in a 425 degree oven for 15-18 minutes or until done.
- MAKE THE GLAZE
- Combine the glaze ingredients in a sauce pan and simmer for 5 minutes.
- Coat the meatballs in the glaze and garnish with scallions and sesame seeds.
- AND
- Serve on wonton chips (just cut wonton wrappers in half diagonally and fry them)
- OR
- Serve on a sandwich with slaw
- OR
- Serve in a bowl with toothpicks
