Lemon Rosemary Chicken Thighs
Boneless, skinless chicken thighs are incredibly versatile but this recipe for Lemon Rosemary Chicken Thighs may be my favorite way to eat them. Boneless and skinless chicken thighs are a star in my kitchen. They cook quickly and are always plump, flavorful and juicy. This recipe is a snap to get on the table in just a few short minutes. Here’s how I do it
Fire up the cast iron skillet
Nothing sears a piece of meat like cast iron. A nice hot cast iron skillet is the key to this golden brown color.
While the chicken is browning, throw in the aromatics. Garlic, rosemary and lemon give this dish a bright, robust flavor.
Make a quick veggie side
In a separate skillet I caramelized an onion for about 5 minutes. I tossed in a bunch vegetables that I happened to have in the fridge. Green beans and broccoli floret00s were what I had on hand however cauliflower, spinach or kale would have been great as well. Pour in a splash ( about a 1/4 cup) of water, vegetable stock or chicken stock to steam and tenderize the veggies.
Honestly, if you have a large enough skillet you can toss the vegetables into the same pan as the chicken and make this a one pot meal.
Lemon Rosemary Chicken
Ingredients
- 2 pounds of boneless skinless chicken thighs
- 1 teaspoon Kosher salt
- 1/2 teaspoon fresh ground black pepper
- 1/2 teaspoon garlic powder
- 1-2 tablespoons of canola or grapeseed oil
- 1-2 cloves of garlic
- 2 lemons
- 3 sprigs of rosemary each about 2-3 inches long
Instructions
- Season the chicken thighs with salt, pepper and garlic
- Heat a 12 inch skillet with the oil
- When the oil is hot sear the chicken for 5-7 minutes on each side deepending on how thick the thighs are
- While the chicken is cooking squeeze the juice of one lemon over the chicken
- Smash the garlic cloves and chop them
- Add the rosemary stems and smashed garlic to the pan
- Cook the chicken until it is browned and cooked through
- Taste for seasoning and add more lemon and salt if necessary
- Garnish with lemon slices
